Fish Cakes
One bite and you'll be hooked on these delicious fish cakes!
What you need:
- 2 cups mashed potatoes
- 1 can "light" tuna in water, drained
- 4-5 oz. breadcrumbs
- all-purpose flour
- corn oil for shallow frying
- peas
- lemon
Tip: Use only "light" tuna in your recipes. Other kinds of tuna can contain too much mercury and may have been caught unsustainably!
What you do:
- Combine mashed potatoes, light tuna, and breadcrumbs in a large mixing bowl. Place the bowl in the refrigerator for 30 minutes.
- Divide the mixture into small balls (about 1/2 cup for each ball). Roll each ball in the flour.
- Shape each ball into a fish shape. Flatten the fish with your fingers.
- Have an adult fry each fish cake on medium heat until golden brown.
- Insert a pea in each fish cake for an eye. Serve each fish cake in a sea of peas with a lemon slice sun.
