Orangey Pancakes

Make a yummy fruit syrup to top pancakes or waffles. 

Orangey Pancakes

What you need:

  • 1 can of mandarin oranges
  • maple syrup or your favorite pancake syrup 

 

What you do:

  1. Open the can of mandarin oranges and drain well. (You may want to save some of the liquid to use in your pancake recipe.)
  2. Chop the orange pieces into small chunks. Keep draining away the liquid. 
  3. Pour equal amounts of mandarin orange chunks and syrup into a small saucepan. Heat on medium temperature until the sauce starts to boil.
  4. Let the syrup cool a bit before using. Enjoy it with pancakes or waffles. 


Use your favorite pancake recipe or try this simple one below:

What you need:

  • 1 ½ cups all-purpose flour
  • 3 tablespoons sugar
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 ½ cup milk (substitute a little juice from the mandarin oranges if you like.)
  • 3 tablespoons oil or melted butter
  • 2 large eggs

 

What you do:

  1. Stir the dry ingredients together in a large mixing bowl. 
  2. Whisk the wet ingredients in a medium mixing bowl.
  3. Carefully add the wet ingredients to the dry. Stir until the batter is mixed, but still lumpy. 
  4. Butter or oil a pan or griddle. Pour small batches of batter onto the heated pan. Flip when bubbles appear on the surface of the pancake.
