Put a fruity twist on classic pancakes.
Materials
- ½ cup freshly grated apple
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 mashed banana
- 1 cup buttermilk
- 1 egg
- 1 cup flour
- 2 tablespoons vegetable oil
- ½ teaspoon salt
- 1 tablespoon sugar
- 2 mixing bowls
Steps
Make Pancake Batter
- In one bowl, mix the egg, buttermilk and oil. In the second bowl, blend the flour, sugar, baking powder, baking soda, and salt.
- Now pour the dry ingredients into the first bowl and stir until blended. It's OK for the batter to be somewhat lumpy. Fold in the apple and banana.
Cook PancakesMelt some butter or margarine in a pan or griddle. (The secret to making pancakes is to get the griddle hot enough without burning the grease.) Once the pan is hot, add a few spoons full of batter. Flip the pancakes when bubbles start to appear on top.
Serve PancakesServe with butter and warmed maple syrup.
Makes 10–12 pancakes.
